Bacon Cheeseburger Meatloaf!

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Prepare the meatloaf mixture:
    • In a large bowl, combine the ground beef, ground pork, breadcrumbs, shredded cheddar cheese, crumbled bacon, and chopped onion.
    • In a separate bowl, whisk together the milk, eggs, ketchup, Worcestershire sauce, mustard, garlic powder, salt, and black pepper.
    • Pour the wet mixture into the meat mixture and gently mix until just combined. Be careful not to overmix, as this can make the meatloaf dense.
  3. Shape and bake the meatloaf:
    • Shape the meat mixture into a loaf shape on the prepared baking sheet, or press it into the loaf pan.
    • In a small bowl, mix the ketchup, mustard, and brown sugar for the glaze.
    • Spread half of the glaze evenly over the top of the meatloaf.
  4. Bake the meatloaf:
    • Bake in the preheated oven for 45 minutes.
    • Remove from the oven, spread the remaining glaze over the top, and return to the oven.
    • Bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (70°C).
  5. Rest and serve:
    • Allow the meatloaf to rest for 10 minutes before slicing. This helps retain its juices and makes slicing easier.
    • Slice and serve with your favorite side dishes.

Tips:

  • Bacon: For extra bacon flavor, you can layer additional bacon strips on top of the meatloaf before baking.
  • Cheese: Feel free to experiment with different types of cheese, such as mozzarella or pepper jack, for a different flavor profile.
  • Make Ahead: You can prepare the meatloaf mixture a day in advance and store it in the refrigerator. Just glaze and bake when ready.
