Banana Pecan Caramel Layer Cake

Ingredients:

1 cup unsalted butter, softened

2 cups packed light brown sugar

1 teaspoon baking powder

1 cup chopped pecans

3 large eggs

1 cup buttermilk

1 cup granulated sugar

1 cup mashed ripe bananas (about 3 large bananas)

1 cup heavy cream

2 teaspoons vanilla extract

1 teaspoon salt

4 cups powdered sugar, sifted

1 cup chopped pecans for garnish

Instructions:

1. Preheat your oven to 350°F (175°C). Prepare three 9-inch round cake pans by greasing and flouring them to prevent sticking.

2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set this mixture aside for later.

3. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until the mixture is light and fluffy. This step is crucial for incorporating air and achieving a fluffy cake.

4. One by one, add the eggs to the mixture, beating well after each addition. Next, mix in the vanilla extract and the mashed ripe bananas until they are fully combined.
