Layers of rich chocolate cake, luscious raspberry frosting, and silky chocolate ganache make for a truly irresistible dessert!

Here’s what you’ll need:

For the cake:

– 1 3/4 cups all-purpose flour

– 3/4 cup unsweetened cocoa powder

– 2 cups granulated sugar

– 1 1/2 tsp baking powder

– 1 1/2 tsp baking soda

– 1 tsp salt

– 2 large eggs

– 1 cup whole milk

– 1/2 cup vegetable oil

– 2 tsp vanilla extract

– 1 cup boiling water

For the raspberry frosting:

– 1 cup unsalted butter, softened

– 4 cups powdered sugar

– 1/4 cup raspberry puree (strained)

– 1 tsp vanilla extract

For the chocolate ganache:

– 1 cup heavy cream

– 8 oz semi-sweet chocolate, chopped

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes. Stir in boiling water (the batter will be thin).

4. Pour the batter into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.

5. For the raspberry frosting, beat the softened butter until creamy, then gradually add powdered sugar and mix until smooth. Add raspberry puree and vanilla extract, and beat until well combined.

6. Once the cakes are cooled, place one cake layer on a serving plate. Spread a layer of raspberry frosting on top, then place the second cake layer on top.

7. Frost the top and sides of the cake with the remaining raspberry frosting.

8. For the ganache, heat the heavy cream in a saucepan until it just begins to boil. Pour over the chopped chocolate in a bowl and let sit for 5 minutes. Stir until smooth.

9. Drizzle the chocolate ganache over the top of the frosted cake, allowing it to drip down the sides.

10. Refrigerate the finished cake for at least 30 minutes to set the ganache before serving.
