Ingredients:
12 oz linguine pasta
1 lb large shrimp, peeled and deveined
Salt and pepper, to taste
3 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 teaspoon red pepper flakes (adjust to taste)
1/2 cup dry white wine (such as Sauvignon Blanc)
1 tablespoon lemon juice (freshly squeezed)
1/4 cup chopped fresh parsley (for garnish)
Lemon wedges, for serving
Grated Parmesan cheese (optional, for serving)
Instructions:
1. Cook the Pasta:
Boil Water: Bring a large pot of salted water to a boil.
Cook Linguine: Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.
2. Prepare the Shrimp:
Season: While the pasta is cooking, season the shrimp with salt and pepper.
Sauté Shrimp: In a large skillet over medium-high heat, add olive oil and 2 tablespoons of butter. Once hot, add the shrimp in a single layer. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
3. Make the Sauce:
Sauté Garlic: In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
Add Wine and Lemon Juice: Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Let it simmer for about 2-3 minutes until slightly reduced.
4. Combine:
Toss Pasta and Shrimp: Add the drained linguine and cooked shrimp to the skillet. Toss everything together, adding reserved pasta water as needed to achieve your desired sauce consistency. Cook for another minute until heated through.
Garnish: Remove from heat and stir in chopped parsley. Adjust seasoning with salt and pepper to taste.
5. Serve:
Plate the Dish: Serve the shrimp scampi over the linguine, garnished with additional parsley.
Add Lemon and Cheese: Serve with lemon wedges on the side and sprinkle with grated Parmesan cheese, if desired.
Tips:
For an extra kick, you can add more red pepper flakes or a dash of hot sauce.
