– 2 ribeye or sirloin steaks (8 oz each)
– 2 tablespoons olive oil
– 2 tablespoons butter
– 4 garlic cloves, minced
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1 teaspoon Dijon mustard
– 1 teaspoon fresh thyme leaves
– Salt and pepper to taste
– Optional: fresh parsley, chopped (for garnish)

1. Pat the steaks dry with a paper towel and season both sides generously with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Add the steaks and sear for 3-4 minutes on each side, or until they reach your desired doneness. Remove the steaks from the skillet and set aside to rest.
3. Lower the heat to medium and add butter to the skillet. Once melted, add the garlic and sauté until fragrant, about 1 minute.
4. Stir in the heavy cream, Parmesan cheese, Dijon mustard, and thyme. Simmer for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
5. Return the steaks to the skillet, spooning the sauce over them. Cook for 1-2 more minutes to heat through.
6. Serve immediately, garnished with fresh parsley if desired. Pair with mashed potatoes or roasted vegetables for a complete meal.
