Ingredients (Serves 4-6):

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 8 oz mushrooms, sliced
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp dried thyme
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Cook the Pasta: Boil the penne until al dente, then drain and set aside.
  2. Sauté the Chicken: Heat 1 tbsp olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, cook until golden and fully done, then set aside.
  3. Prepare the Vegetables: Add the remaining olive oil to the skillet. Sauté mushrooms and asparagus for 5-7 minutes until tender. Stir in garlic and cook for 1 more minute.
  4. Make the Sauce: Pour in heavy cream and chicken broth, then add Parmesan and thyme. Simmer until slightly thickened.
  5. Combine & Serve: Return pasta and chicken to the skillet, tossing everything in the creamy sauce. Garnish with parsley and serve warm.
