- 12 oz penne pasta
- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 8 oz mushrooms, sliced
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp dried thyme
- Fresh parsley (optional, for garnish)
Instructions:
- Cook the Pasta: Boil the penne until al dente, then drain and set aside.
- Sauté the Chicken: Heat 1 tbsp olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, cook until golden and fully done, then set aside.
