Honey-Mustard Glazed Chicken with Cheesy Roasted Potatoes and Asparagus”

  • 🍗 4 chicken breasts
  • 🍯 4 tbsp honey
  • 🥫 3 tbsp Dijon mustard
  • 🧄 2 cloves garlic, chopped
  • 🌱 500 g asparagus
  • 🥔 4 medium potatoes
  • 🛢️ 3 tbsp olive oil
  • 🧀 150 g grated cheese (mozzarella or cheddar)
  • 🧂 Salt and pepper to taste

Directions:

1. Roast the Potatoes:
Preheat your oven to 200°C (400°F). Peel and dice the potatoes. Spread them out on a baking tray, drizzle with 2 tablespoons of olive oil, season with salt and pepper, and toss to coat. Roast for 25–30 minutes, or until golden and crispy.

2. Prepare the Chicken:
In a bowl, whisk together honey, Dijon mustard, and chopped garlic. Season with salt and pepper. Place the chicken breasts on a separate baking tray and coat evenly with the honey-mustard mixture.

3. Get the Asparagus Ready:
Rinse and trim the asparagus, removing the woody ends. Place them on another tray, drizzle with the remaining tablespoon of olive oil, and season with salt and pepper. Toss to coat well.

4. Bake Everything Together:
After the potatoes have roasted for 15 minutes, add the trays with the chicken and asparagus to the oven. Bake all together for another 20–25 minutes, or until the chicken is cooked through (internal temperature should be 75°C/165°F) and the asparagus is tender.

5. Add Cheese:
In the last 5 minutes of baking, sprinkle the grated cheese over the asparagus so it melts nicely.


To Serve:
Plate the honey-mustard chicken alongside the cheesy asparagus and roasted potatoes. This dish is bursting with flavor and color—perfect for a satisfying meal.

Extra Tips:
Pair it with a crisp green salad for balance. For deeper flavor, try using marinated chicken breasts.
