Ingredients:
For the Spinach Mixture:
8 ounces fresh baby spinach
3 cloves garlic, finely chopped
For the Meatballs:
1 pound ground beef
1 pound ground pork
2 ¼ cups bread crumbs
3-4 eggs (depending on size)
A splash of milk
4 cloves garlic, finely chopped
½ cup grated Parmesan cheese
Salt and pepper, to taste
2 tablespoons olive oil for frying
Mozzarella cheese, cut into small cubes
1 jar Rao’s marinara sauce
Instructions:
Preparing the Spinach:
In a skillet over medium heat, warm the olive oil, then add the spinach, stirring until it wilts.
Mix in the garlic and cook for 1-2 minutes until fragrant. Remove from heat, chop finely, and let cool.
Making the Meatballs:
Preheat your oven to 350°F (175°C).
Combine the ground beef, ground pork, bread crumbs, eggs, milk, garlic, Parmesan, salt, pepper, and the spinach mixture in a large bowl. Ensure all ingredients are thoroughly mixed.
Shape the mixture into balls, placing a cube of mozzarella in the center of each, and seal the meat around the cheese.
Heat oil in a skillet and brown the meatballs on all sides.
Add spoonfuls of marinara sauce to the skillet, place the meatballs in the sauce, then cover with foil.
Bake in the oven for 20-25 minutes, or until the meatballs reach an internal temperature of 165°F (74°C).
