Ingredients:
2 pounds cod fillets
½ teaspoon kosher salt
¼ teaspoon white pepper
2 tablespoons extra virgin olive oil, plus more for drizzling
1 cup sliced shallots
1 medium garlic clove, minced
8 ounces cherry tomatoes, halved
2 teaspoons fresh thyme (or 1 teaspoon dried)
1 teaspoon dried oregano
A pinch of freshly grated nutmeg
8 ounces baby spinach
8 ounces feta cheese, crumbled
1 lemon, cut into wedges for serving
Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with foil and lightly grease it with cooking spray or a bit of olive oil.
Prepare the Cod: Check the cod fillets for any pin bones and remove them if necessary. Place the fillets on the prepared baking sheet and season both sides with salt and white pepper.
Heat olive oil in a sauté pan over medium heat. Add shallots and cook until softened, about 3 minutes. Add garlic, tomatoes, thyme, oregano, and nutmeg, cooking for an additional 3 minutes.
Add spinach and cook until wilted, about 2 minutes. Evenly distribute the vegetable mixture over the cod, then top with feta cheese.
Bake uncovered for 20 minutes or until the fish begins to flake. Broil for 2 minutes to brown the feta.
Serve with a drizzle of olive oil and a lemon wedge.
