2 lobster tails (about 6 oz each)
1/2 cup unsalted butter
1 clove garlic, minced
1 tablespoon fresh lemon juice
1/4 teaspoon paprika (optional, for color)

Instructions:
Prepare the Lobster Tails:
Using kitchen scissors, cut through the top of the lobster shell lengthwise, stopping just before the tail.
Gently pull the shell apart and lift the meat out, resting it on top of the shell for an elegant presentation.
Make the Butter Sauce:
In a small saucepan over low heat, melt the butter.
Add minced garlic and cook for 1-2 minutes until fragrant.
Stir in lemon juice, paprika (if using), and a pinch of salt. Keep warm over low heat.
Poach the Lobster Tails:
Preheat a skillet over medium-low heat and pour in the prepared butter sauce.
Place the lobster tails in the skillet, meat side up. Spoon the warm butter sauce over the lobster meat to baste.
Cover the skillet and cook for 8-10 minutes, or until the lobster meat is opaque, tender, and cooked through.
Serve:
Transfer lobster tails to a serving plate. Spoon extra butter sauce over the meat and garnish with fresh parsley.
