Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Prepare the meatloaf mixture:
- In a large bowl, combine the ground beef, ground pork, breadcrumbs, shredded cheddar cheese, crumbled bacon, and chopped onion.
- In a separate bowl, whisk together the milk, eggs, ketchup, Worcestershire sauce, mustard, garlic powder, salt, and black pepper.
- Pour the wet mixture into the meat mixture and gently mix until just combined. Be careful not to overmix, as this can make the meatloaf dense.
- Shape and bake the meatloaf:
- Shape the meat mixture into a loaf shape on the prepared baking sheet, or press it into the loaf pan.
- In a small bowl, mix the ketchup, mustard, and brown sugar for the glaze.
- Spread half of the glaze evenly over the top of the meatloaf.
- Bake the meatloaf:
- Bake in the preheated oven for 45 minutes.
- Remove from the oven, spread the remaining glaze over the top, and return to the oven.
- Bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (70°C).
- Rest and serve:
- Allow the meatloaf to rest for 10 minutes before slicing. This helps retain its juices and makes slicing easier.
- Slice and serve with your favorite side dishes.
Tips:
- Bacon: For extra bacon flavor, you can layer additional bacon strips on top of the meatloaf before baking.
- Cheese: Feel free to experiment with different types of cheese, such as mozzarella or pepper jack, for a different flavor profile.
- Make Ahead: You can prepare the meatloaf mixture a day in advance and store it in the refrigerator. Just glaze and bake when ready.
