8 ounces medium shrimp, peeled and deveined
1 tablespoon olive oil
3 cloves garlic, minced
Kosher salt and freshly ground black pepper, to taste
⅓ cup mayonnaise
¼ cup sour cream
¼ cup shredded mozzarella cheese
2 tablespoons freshly grated Parmesan cheese
½ teaspoon onion powder
¼ teaspoon dried thyme
¼ teaspoon dried oregano
1 French baguette, ends trimmed and cut into ⅓-inch slices
1 tablespoon Cajun seasoning
2 tablespoons chopped fresh parsley, for garnish
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C). Lightly oil a baking sheet or coat it with nonstick spray.
Roast the Shrimp:
Place the peeled and deveined shrimp in a single layer on the prepared baking sheet. Drizzle with olive oil and add minced garlic. Season with salt and pepper to taste. Toss everything together gently to combine.
Roast in the oven for 6-8 minutes, or until the shrimp turn pink and are firm and cooked through. Once done, allow the shrimp to cool slightly before dicing them into bite-sized pieces.
Prepare the Shrimp Mixture:
In a large mixing bowl, combine the diced shrimp, mayonnaise, sour cream, shredded mozzarella, Parmesan cheese, onion powder, thyme, and oregano. Season with salt and pepper to taste.
Assemble the Toast:
Arrange the sliced baguette in a single layer on the same baking sheet. Spoon the shrimp mixture onto each slice. Sprinkle each toast with Cajun seasoning.
Bake the Toast:
Return the assembled shrimp toasts to the oven and bake for 6-8 minutes, or until the cheese has melted and the tops are golden and bubbly.
Garnish and Serve:
